STORY
Our story began with an unexpected encounter, on an afternoon filled with slow, golden light.While traveling through Italy, almost by chance, we arrived in Salento. We were wandering aimlessly through the countryside of Alezio, guided by the wind, the scent of the earth, and the deep silence of the landscape.
That is when we saw it: a 16th-century tower, abandoned, marked by time, yet profoundly alive.We stopped. And in that moment, we felt everything — the warmth of the sun on the stone, the history held within the walls, the stillness of time.
IIt was love at first sight. Instinctive. Unavoidable.We never thought of owning this place, but of listening to it. Of caring for it with respect, restoring its dignity and light, and becoming its quiet guardians.With the invaluable support of Manuel Aires Mateus, the space slowly began to breathe again. Every decision emerged from a dialogue between memory and the present, between what once was and what could be reborn.To fully embrace this journey, we chose to leave Milan and move here. It felt natural, almost necessary. Since then, our life has followed the rhythm of this land — its silences, its shadows, and its blinding light.Today, our mission is to protect this place, preserve its soul, and share it with those who know how to truly feel it.
UNICOETTARO
From the passion and experience of Matilde and Alessandro, shaped through their Milan-based laboratory MYJUICE—focused on fermented beverages and organic cold-pressed juices—comes the desire to return to the land.This project was born from the wish to revive an ancient, native Negroamaro vineyard in the sun-drenched countryside of Alezio,
just seven kilometers from the Ionian Sea.
Attention To Details
The single-hectare vineyard is cultivated using dry farming methods, respecting the natural balance of the soil through organic fertilization, cover crops, and the use of microorganisms.
We have chosen not to hold certifications or labels as an
ethical decision.
We strongly believe that today, the only meaningful way to practice agriculture is through deep respect for the land and for all living beings that inhabit it.
No forcing, in the vineyard or in the cellar.
Only careful work and time.

From this one hectare of ancient negoramaro grape vines, around 1,500 bottles are produced each year, made from hand-selected, hand-harvested grapes.
A wine that reflects its place of origin, where every sip tells a story of care, passion, and deep connection to the land.
